Up North Owners will greet guests w/ a 3oz welcome pour of 2019 Simplicissimus: 100% Riesling. Clean & crisp with refreshing fruitiness. Lemon curd, pineapple & ripe green apple notes with a dry finish.

Whipped Ricotta Crostini with basil, braised tomato and balsamic reduction,

Zucchini Fritter with Garlic Aioli

Mini Goat Cheese Arancini with tomato basil sauce.

  •1st course: 3oz pour of 2020 Bestiary Ramato- 92% Pinot Grigio, 8% Ambra (Malvasia Bianca, Sauvignon Blanc & Tocai Friulano). Tea-like notes & bright fruit flavor. Features hints of clove, pomegranate & tropical fruit flavors with a delicate tannin finish. Our third vintage of Bestiary Ramato, this unique wine captures your attention with tea-like notes and bright fruit flavor. Pairs well with bitter green salads, Brussels & spice.

-Paired with Winter Citrus Salad with toasted hazelnuts and citrus fruits finished with a Honey-Balsamic vinaigrette. (all vegetarian, )

      •2nd course: 3oz pour of 2019 Cabernet Franc- Bright, juicy & fruit forward with notes of raspberry & tart strawberry. Mouthwatering acid creates a classic cool climate complexity against fine tannins, low acidity & preserved red fruit & levity. It pairs well with roasted duck, brie cheese, mushroom risotto, or salty grilled ground meats.

Red Wine Braised Duck with Olive Gremolata and red wine marinara. Served over Mushroom risotto.

Substitute. Roasted Cauliflower steak with similar set up

      •3rd course: 3oz pour of 2017 Proserpina- Reserve blend of 65% Merlot & 35% Teroldego. Approachable, dark red berry notes, dark fruit, lush Merlot texture, youthful Teroldego astringency & a fine tannin finish. Aged over 4 years in the demi-muids show as present oak throughout. Pairs well with rich meat dishes like pasta carbonara, pork tenderloin, & beef bourguignon.

Peposa Dell'Impruneta- A Tuscan Classic- Pepper Corn Certified Angus Beef Short Rib served over creamy polenta and a rich demi-glace.

Substitute Roasted Vegetable and lentil lasagna

      •4th course: 3oz pour of 2018 Scriptorium Riesling- Bright & juicy upfront with notes of citrus, melon, peach & apple on the mid-palate with a balanced, pithy texture & pleasingly off-dry finish. Pairs well with sweet & tangy sauces over pulled pork, brisket, or chicken; spicy pad-thai or ground pork salad, croque-monsieur, sweet & salty ham, & gooey cheese.

Served with Torta di Mele aka classic Italian apple cake, served with vanilla Ice bean gelato .
